Delicious Dish to Try This Winter: Turkey Divan Casserole

When winter rolls around, there’s a few recipes I love to make that, although they taste delicious, I only prepare them once or twice a year, either due to the amount of work it takes to make them, or because of the decadence of the dish. Today’s recipe falls under the latter category. Made with butter, cheese, mayo, and half and half, this casserole is creamy, high calorie comfort food that instantly takes me back to my grandma’s kitchen. 

My grandma (my dad’s mom) was an amazing cook, and while I loved almost everything she made, the recipe that I most associate with her is turkey divan. While she utilized leftover turkey after the holidays, I’ve adopted this recipe in numerous ways, one of which is in making it with leftover cooked turkey or chicken. 

Another adaptation I made to this recipe over the years is transforming it from a dish made with lots of processed ingredients, to a more scratch-made option. My grandma’s recipe called for things like condensed cream of whatever soup (usually cream of broccoli or cream of chicken) and Velveeta cheese. I swapped those items out for my made from scratch gravy with the addition of half and half to give it that creamy consistency, and grated cheese.

Here’s the recipe and ingredients

A double batch of my gravy
 
1/2 cup half and half
 
1/2  to 1 tsp curry (I love the taste of curry, so I opt for the full teaspoon, but use half if you want less curry flavor)
 
Pinch of nutmeg
 
1 tbs nutritional yeast (optional, but without using the processed ingredients I find the nutritional yeast gives the dish that zesty, cheesy zip often found when using Velveeta)
 
1 cup mayo
 
2 cups turkey, or chicken (shredded or chopped, your choice) 
 
1 cup cooked rice (white or brown) 
 
1/2 bag of frozen broccoli, steamed (I like it chopped into bite sized pieces) 
 
Salt and pepper, to taste
 
8 oz block cheddar cheese, grated
 
3 tbs melted butter
 
2 oz breadcrumbs 
 
 
Directions:
 
Preheat oven to 375. To a large mixing bowl, add the 1/2 cup of half and half, gravy (that’s been slightly cooled), rice, seasonings, mayo, broccoli, rice, and turkey, and mix until combined. Grease a baking dish with butter or cooking spray, this fits well in a 9X13, or two smaller pans, and pour contents of bowl into the greased dish. Top with grated cheese, breadcrumbs, and three tablespoons of melted butter and bake until bubbly and the top is golden brown. Baking time can vary by oven and the size of your baking dishes, but for my oven, a 9X13 baking dish bakes for about 30-35 minutes. 
 
This dish is excellent served alone, but you could also serve with hot rolls or freshly baked bread, (holy carbs, Batman!) or a green salad. If you make this recipe, I’d love to hear from you.
